The Barhi date provides a varying degree of sweetness depending upon its ripeness level, ranging from fresh sugar cane to coconut and butterscotch. They are smaller and more spherical than other varieties and usually have a small fragment of the stem cap still attached to one end. When semi-ripe the Barhi date has a golden yellow color and a crunchy apple-like texture with a slight sweetness and mild astringency. It will turn a brownish color as it ripens, becoming soft and chewy with a thin crisp outer skin. With further ripening, the development of a richer sugar content brings out more butterscotch notes and a caramel candy quality. The completely soft (Rutab) fruit is too soft to ship. That is why the Barhi dates should ship within the first 3-4 weeks of harvest.
